Black Rice Mango and Avocado Salad with Grilled Chicken.

Serves 5. Total Calories per serve: 921

INGREDIENTS:

1kg Chicken Thigh ( Free Range)

2 Cups Black Rice (Uncooked)

1 Large Ripe Mango

1 Ripe Avocado

1/2 Red Onion

DRESSING:

2 1/2 Tbs Olive Oil

3 Cloves Garlic

The juice of 3 limes

1/2 Cup chopped coriander(cilantro)

METHOD:

1hr prior to dinner cook rice and let cool.

20min prior to dinner remove excess fat from chicken then coat with olive oil and S&P to taste then grill. Whilst chicken is cooking place dressing ingredients in blender until smooth. Cut up mango into small cubes. Once chicken is cooked stir dressing and mango through cooked rice and serve with avocado, can serve with lime wedges and fresh coriander for garnish. Enjoy
